All About Bake It Nice

Our seasonal pop-up from Chef Laura Cronin and the Eleven Madison Park pastry team is back for 2025 with new flavors of deliciously flakey Madison Squares at each edition. Here’s everything you need to know about stopping by.

What is Bake It Nice?

Bake It Nice is a pop-up bakery from our pastry chefs at Eleven Madison Park. We started it in 2023 as a way to spotlight the amazing work our team was doing with plant-based pastry, building on the lamination techniques they use for our beloved bread rolls. 

After launching with a rotating selection of delicious croissants, our Executive Pastry Chef, Laura, came up with her own signature pastry for the pop-up: the Madison Square. Crispy on the outside and soft on the inside, they are cross-laminated and filled with a different ganache or jam at each edition. 

Chef Laura picks two new flavors for every pop-up, based on what’s in season. Previous highlights include Sweet Pumpkin with Brown Sugar & Spiced Cream, Chocolate with Sunflower & Pecan Praline, Meyer Lemon with Elderflower & Yuzu, and Chocolate with Cherry & Espresso.

When is it? 

Our next editions will be on Saturday, May 10, and Saturday, June 14, outside the front doors of Eleven Madison Park. We’re open from 11 am until sold out, but people often start lining up a few hours earlier.

What can I get? 

We sell our Madison Squares in sets of duos, so there’s no need to choose between flavors. Follow us on Instagram to find out what we’re serving each weekend.
