Nathan McCarley-O'Neill began his career at the prestigious Merchant Hotel in Belfast, Northern Ireland, while it held the title of World’s Best Bar. After relocating to London to join the team at Milk and Honey, Nathan continued his career as the opening bar manager of Dandelyan at the Mondrian Hotel, whose accolades include: World's Best Cocktail Menu and World's Best Cocktail Bar at the TOTC Spirited Awards, Best Bar Team in London at the Time Out Bar Awards, and number three on the World’s 50 Best Bars list, all in 2016. Nathan was named World’s Most Experimental Bartender at the Glenfiddich global competition and Bartender of the Year at Heaven’s Hill National Bartender Finals. Under Nathan’s leadership as NoMad Bar Manager, the team retained their title at the number one bar in North America. In 2019 he was promoted to East Coast Bar Director, and subsequently Bar Director of the Americas.
